Robertet perfumers Patricia Bilodeau and Elena Valdivieso-Ruiz created three original scent expressions — sun/maíz, fire/agave and forest/cacao — for "Oaxaca: Tierra y Tiempo," an immersive dining experience opening in New York on Oct. 2.

The project marks the French fragrance and flavor house's entry into experiential dining. Peter Kim, founder of The Infinite Table, a new company that fuses 360-degree video with food, worked with sensory adviser Paul Austin to explore scent as a way of transporting diners to Oaxaca, Mexico.

The debut experience runs as a monthlong residency at artXnyc in the Meatpacking District. Tickets start at $95 for a three-course lunch and $139 for a five-course dinner.

How does scent drive the narrative?

Austin insists the choreography matters as much as the scents themselves. Each scent enters the room at a precise point in the story, with its timing, intensity and duration calibrated to what guests see, hear and taste.

"The precision really matters: what you smell, when it enters, its intensity and how long it stays. When all of those things come together, scent can become part of the narrative itself and help an experience stay with you," Austin said.

Guests sit at communal tables while the story of each dish unfolds on the walls around them through projection. When a dish appears on screen, it arrives at the table.

What comes after New York?

After the New York run, The Infinite Table plans to bring "Oaxaca: Tierra y Tiempo" and future chapters to Los Angeles, Chicago and additional cities across the U.S.

For Robertet, the collaboration signals how perfumery expertise can extend beyond bottles and into ticketed, multi-sensory entertainment — a channel beauty houses are watching as immersive experiences draw premium prices.
